Zucchini Pasta

Zucchini and tomatoes are tossed with pasta and chicken in this simple main dish.
 

Ingredients

  • 1 16 oz. pkg. spaghetti, cooked and drained
  • 2-zucchini squash, cut into quarters
  • 2 Tbsp-olive oil
  • 1 1/2 tsp.-Emeril Essence (adjust to taste)
  • Salt & Pepper to taste
  • 2- large ripe tomatoes, cut into quarters
  • 2 cooked chicken breast halves, cut into bite-size pieces
  • 1 Tbsp-butter

Method

In very large skillet, cook, and stir zucchini in hot oil. Sprinkle with Essence, salt, and pepper and cook for 4 minutes. Add tomatoes and cook 1 more minute. Add cooked meat, cooked pasta, and butter. Season to taste.

 

Notes: A great sauce for left over noodles and a good use of leftover cooked meat or seafood.
