Zesty Ginger-Kissed Chicken

This recipes uses a large, organic chicken, cut into quarters, sprinkled with a mixture of paprika and ground red & black peppers. During baking, it's brushed with a blend of pineapple, honey, garlic and a generous amount of fresh ginger.
 

Ingredients

  • 1 (4-5 lb.) Natural or Organic Chicken
  • 1/4 teaspoon Cayenne Pepper
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon coarsely ground pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon dried cilantro (optional)
  • 2 tablespoons Olive Oil
  • 1/2 cup freshly grated Gingerroot
  • 4 large cloves freshly pressed garlic
  • 2 tablespoons Honey
  • 1/4 cup crushed pineapple

Method

Preheat Oven to 375 degrees. Thoroughly clean chicken in cold running water. Split chicken length-wise. Remove back and ribs of chicken. Separate chicken into four quarters: dark and white pieces (thigh-leg, breast-wings.) Pat the chicken dry and place chicken, skin side up, in an oiled shallow rectangular baking dish. In a bowl mix all dry seasonings together. Take a pastry brush and brush chicken with olive oil on both sides. Once all pieces are oiled, sprinkle both sides with the dry seasoning blend. Take care to make sure chicken is skin side up in dish when finished seasoning. Bake chicken in preheated oven for 45 minutes. Meanwhile, mix honey, crushed pineapple, freshly pressed garlic cloves and freshly grated gingerroot. Remove chicken from oven; increase temperature to 400; drain off drippings from the pan. Brush chicken generously with the honey-pineapple glaze. Return to oven for an additional 12 minutes @ 400 degrees.

 

Notes: Serve with wild, brown or white rice, along with steamed broccoli and carrot slices.
