Zero-Low Carb Crumbed Chicken or Fish

Skinless, boneless chicken breast (or fish fillet) is dipped in egg and coated with a ground seed mixture, seasoned with chives and sage.
 

Ingredients

  • 1 skinless, boneless chicken breast half or 1 fish fillet
  • 1 egg, beaten
  • 1/2 cup ground pumpkin seed, sesame seed and linseed (flaxseed)
  • 1 tsp chopped chives
  • 1 tsp rubbed sage
  • 2 chopped sundried tomatoes (optional)

Method

Combine dry ingredients together with or without sundried tomatoes and sprinkle out on a flat plate. Mix the egg with a fork. Completely cover the chicken breast or fish with the egg, leaving no corner uncovered, and quickly roll in the seed mixture. Fry or grill on low heat, using cooking spray or a nonstick fry pan, until fully cooked through.

 

Notes: A quick easy meal to make. Serve with a side of garden salad sprinkled with lime juice rather than salad dressing.
