A mixture of frozen vegetables--green beans, broccoli and artichoke hearts--is combined with sliced chicken sausage links in an Italian herbed tomato sauce.
Ingredients
- 4 cloves garlic, thinly sliced
- 1/4 cup olive oil
- 8 ounces frozen broccoli flowerettes
- 8 ounces frozen artichoke hearts
- 2 cups frozen green beans
- 2 Italian-style chicken sausage links
- 8 ounces fresh chunky tomato sauce
- 1 tbsp dried Italian mixed herbs
- Fresh Parmesan cheese
- Olive oil, as desired

Method
Spray a large saute pan with cooking spray. Add garlic to pan over medium heat for a couple of minutes. Add 1/4 cup of the olive oil and the frozen vegetables to garlic; cook and thaw about 20 minutes. Slice sausages and place in another sprayed pan. Allow to "caramelize" and brown on each side, stirring occasionally. Once vegetables are cooked, add tomato sauce; cook to reduce liquid, if necessary, then add Italian herb mixture. Mix sausage into vegetables and serve. Top with shave fresh Parmesan and additional olive oil.
Notes: If the frozen veggies are giving off too much liquid, drain some of the liquid and continue to cook. Add the sauce only when the liquid has either been evaporated or drained off.
