Will-You-Maui-Me Chicken Salad

Chicken chunks are combined with dried apricots, raisins and pecans, and a dressing that blends sour cream, apricot preserves, coconut liquid and a generous amount of grated fresh ginger.
Ingredients
- 2 small coconuts
- 4 skinless boneless chicken breast halves
- 1 1/2 cups chicken broth
- 1/4 cup cut up dried apricots
- 1/4 golden raisins
- 1/4 cup pecans
- 1/2 cup apricot preserves
- 1/4 cup sour cream
- 3 tablespoons fresh grated ginger
- Salt and white pepper, to taste
- Fresh mint for garnish

Method
Split coconut in half to make 4 bowls, reserving coconut liquid. Set aside 2 tablespoons of this liquid for the salad. Add the remaining liquid to chicken broth. Poach chicken in broth mixture for 20 to 25 minutes or until done. Let chicken cool. Rough chop the chicken; combine with raisins, pecans and dried apricots. Melt preserves in saucepan. Remove from heat. Stir in sour cream and the 2 tablespoons reserved coconut liquid. Blend into chicken mixture along with grated ginger, salt and white pepper to taste. Refrigerate at least 1 hour. Serve in coconut shells. Garnish with fresh mint.
