Wild Rice-Chicken Soup

Cream of chicken soup is the base for this easy recipe, which combines vegetables, cubed chicken, plus wild rice mix and its seasoning packet.
 

Ingredients

  • 3 Tbsp margarine or butter
  • 1 stalk celery (chopped)
  • 1 medium carrot (chopped)
  • 1 cup fresh mushrooms (sliced)
  • 1/3 cup onions (chopped)
  • 2 cups cubed raw chicken
  • 1 package long grain and wild rice mix
  • 2 tsp (or desired amount) instant chicken bouillon granules
  • 2 cans cream of chicken soup (undiluted)
  • 5 2/3 cups water

Method

In large saucepan melt margarine over medium heat. Stir in celery, carrots, mushrooms, onions and chicken. Stirring frequently, cook until chicken is fork-tender and juices run clear. Add dry rice mix with its seasonings, soup, bouillon granules, & water; bring to boil. Cover, reduce heat and simmer 20-30 min., or until rice and veggies are tender.
