Wasabi Crusted Chicken Breasts with Plum Rice

This tender, moise chicken is marinated in garlic and ginger, breaded and fried until crisp--serve with plum flavored rice.
Ingredients
- 1/2 cup rice wine vinegar
- 2 teaspoons sesame oil
- 2 cloves garlic, minced
- 2 teaspoons fresh ginger, minced
- 8 boneless skinless chicken breasts
- Salt and freshly ground black pepper
- Peanut oil, for frying
- 2 cups flour
- 4 teaspoons wasabi powder
- 2 large eggs, lightly beaten
- 1/3 cup water
- 2 cups Panko bread crumbs
- Plum slices, for garnish
- Green onions, for garnish
- Plum Rice:
- 2 cups sushi short grain rice
- 1 fresh plum, seeded and finely diced
- Salt and pepper

Add rice wine vinegar, sesame oil, garlic, and ginger to a large mixing bowl. Season chicken with salt and pepper and add to bowl. Turn to coat and let marinate for 15 minutes. Place enough peanut oil in a large, deep skillet to come up to about 1 inch. Preheat oil to 350 degrees. Set out three shallow dishes. Fill the 1st with flour and 2 teaspoons wasabi powder and mix well. Fill 2nd with eggs and water and mix well. Fill 3rd with Panko bread crumbs and 2 teaspoons wasabi powder and mix well. Remove chicken from marinade. Dredge chicken in flour mixture and shake off excess. Then dip chicken in egg wash and shake off excess. Lastly place chicken in Panko bread crumbs. Press so mixture sticks to chicken. Repeat for each piece of chicken. Add chicken pieces to hot oil, skin side down and cook about 7 minutes. Flip pieces and cook for 7 minutes, or until chicken is cooked through. Immediately season with salt and freshly ground pepper. Drain on paper towels. To serve, place plum rice on a large serving platter. Top with chicken breasts. Garnish with plum slices and green onions. Plum Rice: Prepare sushi rice according to package directions. After rice has cooked, add plum and stir until well combined. Season to taste with salt and pepper.
