Warm Chicken Salad

Chicken, celery, and onion are baked in a mixture of cream of chicken, mayonnaise, and lemon juice. Potato chips are sprinkled over top.
Ingredients
- 1 to 1 1/2 pounds Chicken, cooked and cut into 1 inch cubes
- 1 can of Cream of Chicken Soup or Reduced-Fat Cream of Chicken Soup
- 2 Tablespoons Mayonnaise
- 1 Tablespoon Lemon Juice
- 1 Cup diced Celery
- 1/4 Cup diced Onion
- 1 can sliced Water Chestnuts, drained (optional)
- Crushed Potato Chips

Grease a 1 1/2 qt. casserole. Preheat oven to 350 degrees. Combine all ingredients, except potato chips. Pour into casserole dish; sprinkle with crushed chips. Cover and bake for 30 minutes, or until bubbly.
Notes: Recommend serving with flavored rice (such as Uncle Ben's Chicken Rice).
