Waldorf Chicken Pita


The flavor of a traditional Waldorf salad, stuffed in a pita with lettuce for a quick and easy meal on the go.



Ingredients:

  • 2 cups cubed cooked chicken
  • 1/2 cup finely diced celery
  • 1 cup green or red grapes, halved
  • 1 cup cored and diced apple
  • 1/2 cup chopped pecans
  • 1/2 cup mayonnaise
  • 2 tablespoons honey mustard
  • 1 tablespoon brown sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon lemon pepper
  • 8 crisp lettuce leaves
  • 4 6 inch pita breads, halved

Method

In a bowl combine first 10 ingredients, toss well to coat. Place a lettuce leaf lining in each, pita bread half and fill with 1/8 of filling. Repeat with remaining pita breads and filling.

Notes: We love to bring these crunchy salad sandwiches on hikes and bikes. They can be easily assembled at your destination, but hold up nicely when made ahead, wrapped tightly in plastic or foil. And, they don't weigh you down, but give you plenty of energy to play in the outdoors.
