Turkey Broccoli Roll-Ups


Dried tomato-flavored tortillas are spread with cream cheese and topped with Jarlsberg cheese, turkey, lettuce, hard-cooked egg slices and broccoli spears, to make these "wrap" sandwiches.



Ingredients:

  • 4 (8-inch) sun-dried tomato flour tortillas
  • 6 ounces chive and onion cream cheese spread
  • 4 ounces sliced Jarlsberg cheese
  • 12 ounces very thinly sliced deli turkey
  • 4 lettuce leaves (if available, use red leaf or oak lettuce)
  • 2 hard cooked eggs, sliced
  • 1 (10-ounce) package frozen broccoli spears, cooked according to package directions and drained thoroughly

Method

Spread the top half of each tortilla with one-fourth of the cream cheese; top each with one-fourth of the sliced cheese, turkey, lettuce, egg slices and broccoli (trimming to fit, if needed.) Fold the bottom half of each tortilla over the top half to within about 1 1/2-inches of the top edge. Fold in sides; roll up. Close with a decorative toothpick, if available.
