Tossed Salad with Spicy Chicken

Spicy hot cherry peppers and sauteed chicken make a main dish out of this Italian tossed salad.
 

Ingredients

  • 1 lb boneless chicken breasts (bite sized pieces)
  • 4 hot cherry peppers, halved seeds removed
  • Olive oil
  • Garlic powder
  • Salt and pepper
  • Assortment of salad greens
  • 1/2 red onion
  • 1 cucumber
  • Carrot pieces
  • Black olives
  • Pepperocinis
  • Croutons or anything you like in salad
  • Crumbled blue cheese or feta cheese
  • Light Italian dressing

Method

Heat saute pan to medium to hot. Add oil and peppers, and saute for 1 minute. Season chicken breasts with salt, pepper & garlic powder to taste and add to pan. Saute until cooked and set aside. Make tossed salad with your favorite ingredients (note list above). Toss with blue cheese or feta, croutons and Italian dressing. Top with warm chicken.

 

Notes: This is one of my 10 year olds favorite light meals. Its healthy, filling and can be adjusted to meet anyone taste, just by altering the ingredients to your liking. It's so easy too.
