Tortas de Pollo

Chicken patties are breaded and fried, then topped with a creamy sauce and a fresh salsa of peaches, green onions, and cilantro.
Ingredients
- 4 cups chopped cooked chicken
- 1 1/2 cups seasoned bread crumbs
- 2 eggs
- 1 cup dairy sour cream
- 1 tbsp. stone ground mustard
- 8 green onions, finely chopped
- 1/2 cup grated Parmesan cheese
- 1 tbsp. no-salt herb seasoning
- 2 tbsp. snipped fresh basil
- 1/2 cup snipped fresh cilantro
- 1/2 cup finely chopped red bell pepper
- 1 fresh anaheim chile pepper, seeded and diced
- 1 cup finely chopped onion
- 1/2 cup finely chopped celery
- 3 tbsp. olive oil
- 2 tsp. grated lime peel
- 4 tbsp. lime juice
- 1 tsp. chipotle hot sauce
- Salt
- Freshly ground black pepper
- 1 cup finely chopped fresh peaches
- 3 tsp. ground cumin
- 1 fresh jalapeno chile pepper, seeded and diced
- Assorted salad greens

In a large bowl combine chicken, 1/2 cup of the bread crumbs, 1 of the eggs, 1/2 cup of the sour cream, mustard, half of the green onions, Parmesan cheese, herb seasoning, basil, and 1/4 cup of the cilantro. Set aside. In a skillet cook bell pepper, anaheim pepper, onion, and celery in 1 tablespoon of the hot oil until tender; stir into chicken mixture. Shape chicken mixture into patties. In a small bowl beat remaining egg. Place the remaining bread crumbs in shallow dish. Coat chicken patties with egg and bread crumbs. Fry patties in remaining hot oil about 5 minutes on each side or until golden brown. Drain on paper towels. In a small bowl combine remaining sour cream, 1 teaspoon of the lime peel, 2 tablespoons of the lime juice, and hot sauce. Season to taste with salt and black pepper. Cover and chill until needed. For salsa, in a small bowl combine the peaches, remaining lime juice, remaining lime peel, remaining green onions, remaining cilantro, cumin, and jalapeno pepper. To serve, arrange salad greens on each serving plate; add a chicken patty. Top each with some of the sour cream mixture and a dollop of salsa.
