Thai Star Thai Fried Rice

Cold, cooked rice is combined with chicken and assorted vegetables to make this Thai fried rice side dish.
 

Ingredients

  • 1 Tbsp. vegetable oil
  • 1 egg, beaten
  • 1 skinless, boneless chicken breast, cut into small pieces
  • Assorted chopped vegetables, to taste (snow peas, bean sprouts, leftover veggies, etc.)
  • 1 Tbsp. chopped onion
  • 1 Tbsp. chopped tomato
  • 1 cup cold, cooked rice
  • 1/2 tsp. sugar
  • Dash pepper
  • Soy Sauce

Method

Add oil to a hot skillet. Add egg and scramble until cooked. Add chicken pieces; cook until no pink remains. Add vegetables, onion, tomato, cold rice, sugar, pepper, and 10 drops of soy sauce. Stir over heat until rice is dry and starts to turn clear and shiny.

 

Notes: With this recipe you can make restaurant-tasting fried rice at home. Be sure that the rice is thoroughly chilled when you start.
