Teriyaki Chicken Salad


This salad is made with romaine lettuce, snow pea pods, carrots and cucumbers with grilled teriyaki chicken and crunchy chow mein noodles.



Ingredients:

  • 1 bottle teriyaki sauce
  • 2 whole chicken breasts
  • 3 Tbsp sugar
  • 2 Tbsp pureed ginger
  • 1 cup matchstick carrot slices
  • 1 cup matchstick cucumber pieces
  • 1 package pre-washed romaine lettuce
  • 1 1/2 cups blanched snow pea pods
  • 1 cup mung bean sprouts
  • 2 Tbsp rice wine vinegar
  • 1/3 cup toasted almond slivers
  • 1 1/2 cups chow mein noodles

Method

Marinate chicken breasts in 1/2 bottle of sesame teriyaki marinade, 1 Tbsp ginger and 2 Tbsp sugar for 30 minutes (in a zip top bag or some other non reactive container). In a salad dressing cruet, combine 1 Tbsp sugar, rice wine vinegar, 1 Tbsp pureed ginger and unused teriyaki marinade and shake well. Combine all ingredients except chicken in large bowl and toss. Grill chicken breasts until cooked through, than dice into bite sized pieces and add to salad. Dress salad just before serving.

Notes: This looks very impressive, but is easy to make and tastes fantastic.
