Tangier Style Fried Chicken

This Morrocan style chicken is delicately seasoned and has a crisp pistachio crust.
 

Ingredients

  • Peanut oil, for frying
  • 4 chicken legs
  • 4 chicken thighs
  • Salt and freshly ground black pepper
  • 2 cups flour
  • 2 large eggs, lightly beaten
  • 1/3 cup water
  • 2 cups shelled pistachios, crushed
  • Dried figs, for garnish
  • Cilantro leaves, for garnish
  • Tangier Spice Rub:
  • 1 Tablespoon ground ginger
  • 1 Tablespoon ground cinnamon
  • 1 Tablespoon ground cumin
  • 1 Tablespoon ground coriander
  • 1 Tablespoon ground tumeric
  • 1 Tablespoon ground cayenne pepper

Method

To make Tangier Spice Rub, combine all ingredients in a bowl and mix well. Place enough peanut oil in a large, deep skillet to come up to about 1 inch and preheat to 350 degrees F. Generously season chicken with Tangier Spice Rub and season with salt and pepper. Let marinate for 15 minutes. Set out three shallow dishes. Fill the 1st with flour, 2nd with eggs and water and mix well. Fill the 3rd with pistachios. Dredge chicken in the flour mixture and shake off excess. Dip chicken in egg wash and shake off excess. Lastly place chicken in pistachios and coat thoroughly. Press so mixture sticks to chicken. Repeat for each piece of chicken. Add chicken pieces to hot oil, skin side down and cook about 10 minutes. Flip pieces and cook for 5 minutes. Cover skillet, reduce heat slightly, and continue to cook about 10 minutes. Remove lid and flip chicken pieces. Cook until golden brown. Remove chicken from oil and immediately season with salt and freshly ground pepper. Drain on paper towels. To serve, place chicken on a large serving platter. Garnish with figs and cilantro.
