Sweet Peach Mexican Chicken

Peaches give this chicken dish a new and fresh flavor.
Ingredients
- 2 chicken breasts
- 1 can peach halves in heavy syrup
- 1/4 cup Catalina French salad dressing
- 1 tbsp dried pepper and herb salad dressing mix
- 1/4 tsp ground chili powder
- 1/4 tsp ground cumin
- Garnish (optional):
- Fresh parsley

Slice chicken breasts in halve lengthwise and pound with meat mallet until 1/4" thick. Cut each pounded piece in half to have a total of 8 pieces. Puree peaches and syrup in food processor until fine puree forms. Mix together peach puree, French dressing, dried salad dressing mix, chili powder, and cumin. Using cooking spray, coat 9 x 12 glass baking dish. Place chicken pieces in single layer in baking pan. Spoon peach mixture over top of chicken pieces. Bake in preheated 350 degree oven for 35 minutes. Serve warm, garnished with parsley.
Notes: This is a light recipe that delicious when served with rice.
