Sweet and Spicy Chicken Wraps

A filing of chicken strips, Fajita seasoning, brown sugar & red pepper flakes is used (along with cheddar cheese) to fill flour tortillas.
Ingredients
- 1 large whole chicken breast, skinned, boned, cut into thin strips
- 1 green onion, finely chopped
- 1 Tbsp fajita seasoning
- 2 Tbsp brown sugar
- 1/2 tsp crushed red pepper flakes
- 4 oz cheddar cheese, shredded
- 8, 10-inch flour tortillas
- Olive or vegetable oil

Method
1. In large frying pan, add 2 Tbsp. of oil and lightly saute green onion approx. 1 min. 2. Add chicken strips to pan, and cook until chicken is completely cooked through, approx. 5 min. Remove from heat. 3. Sprinkle chicken mixture with fajita seasoning. 4. Mix in brown sugar and red pepper flakes. 5. Prior to filling each tortilla, soften them first by warming in a separate fry pan (using 1 Tbsp of oil) or in a non-stick skillet. 6. Fill each tortilla with 2 heaping Tbsp. of chicken mixture and 1/8 of the cheddar cheese. 7. Roll each filled tortilla up like a log, folding in two ends prior to the last roll. 8. Wrap each rolled tortilla in foil, put in baking dish and keep warm in 200 degree oven until ready to serve (no more than 30 minutes is best.)
Notes: Softening tortillas first in oil will allow them to keep in warm oven longer without getting hard. But these are best if served within 30 minutes of preparation.
