Summer Micro Chicken Curry with Melon

This dish is great if you are in a hurry to make a meal. The entire dish can be prepared in the microwave and served. Now that is convenient.
 

Ingredients

  • 1 cup ketchup
  • 1 tablespoon mild curry powder
  • 1 tablespoon fresh grated ginger root
  • 1 teaspoon cayenne pepper
  • Juice of l fresh lime (reserve peel)
  • 8 chicken legs (about 2-1/2 pounds) skin removed
  • 1/2 small cantaloupe, peeled, cut into small bite size pieces (about 2 cups)
  • Hot cooked rice
  • Zest from reserved lime peel

Method

In large round microwave safe casserole dish, combine the ketchup, curry powder, ginger root, cayenne pepper and lime juice. Add chicken legs and turn to coat. Arrange chicken legs in a fan, with the thin part of the legs in the center of the dish. Cover with wax paper and microwave at medium high 17 to 18 minutes, turning once. Remove chicken from microwave and add melon pieces. Cover with foil and let stand 10 minutes until drumsticks are cooked through and tender. Place hot rice on large platter. Arrange chicken and melon over rice and cover with sauce. Garnish with lime zest. Serve hot

 

Notes: Made be microwaved on a 10-inch Pyrex pie plate.
