Stuffed Cornish Hens

Cornish game hens stuffed with mushrooms and rice for an easy to make dinner.
Ingredients
- 2 hens
- 2 tbs chopped onion
- 1/3 C. uncooked rice
- 3 ts. butter/margarine
- 1 C. water
- 1 chicken boullion cube
- 1 tsp lemon juice
- 1/2 tsp salt
- 1 3 oz. can mushrooms (drained)

Clean out hens, salt and pepper each. In small sauce pan, cook onions, rice and butter 5-10 minutes, stirring frequently. Add water, boullion cube, lemon juice and salt. Bring to boil, stirring to dissolve cube. Cook slow 20 - 25 minutes (covered) or until liquid is gone and rice is fluffy. Stir in mushrooms. Lightly stuff hens with mixture. Place breast side up on rack in shallow backing pan. Brush with butter. Roast (covered) at 400 for 30 minutes. Uncover and roast one hour longer or until legs can be twisted in sockets, buttering occasionally.
