Spicy Salsa Chicken

An easy, spicy baked chicken casserole--just cover boneless, skinless chicken with salsa and seasonings then top with cheese.
 

Ingredients

  • 5-6 boneless, skinless chicken breasts or tenderloin of chicken
  • 1 jar salsa
  • 1 tsp chili powder
  • 1 tsp cumin powder
  • 2 tsp garlic powder
  • 2 tsp seasoning salt
  • 1 tsp black pepper
  • Shredded cheese, optional

Method

Preheat oven to 350 degrees. Use spray oil or lightly grease a 9 by 13 inch pan. Rinse chicken and place in pan. Sprinkle with seasoned salt, chili powder, cumin, garlic, and black pepper. Cover chicken with one jar of salsa. Place in oven and bake uncovered for 30 to 45 minutes depending on thickness of chicken. Test for doneness by cutting one piece in half. Adjust cooking time as needed. If adding cheese, do so during the last 10 minutes of baking.

 

Notes: You may add or subtract from this dish according to your taste. Some might like green onion or cilantro to garnish, maybe a squeeze of lime would brighten the dish. For leftovers you can put chicken in rice, roll in a tortilla with cheese and vegetables for a great burrito.
