Spicy Grilled Chicken

This popular cooking method seasons the whole chicken, then places it upright over an opened can of beer, and grills it using indirect heat.
 

Ingredients

  • 1 6- to 8-lb. whole roasting chicken
  • 1 16-oz. can beer
  • Monterey grill seasoning

Method

Remove giblets from chicken cavity and sprinkle inside with seasoning. Coat outside with seasoning. Open beer, remove tab, then slide chicken upright over can. Position chicken on grill for indirect heat, with breast facing heat source. Roast 60-90 minutes until skin is golden brown. Remove from grill by carefully tipping chicken into a baking dish, allowing beer to pour into chicken. Let chicken rest about 15 minutes. Chicken has a wonderful flavor and is extremely moist.

 

Notes: A can of fruit juice or water may be substituted for beer.
