Spicy Chicken Stir-Fry

The chicken strips and the sliced potatoes and carrots are seasoned with jalapeno peppers, bottled hot pepper sauce, plus a blend of Cajun spices and cayenne.
Ingredients
- 4 large Idaho potatoes
- 2 carrots, thinly sliced
- 3 skinless, boneless chicken breasts
- 1 scallion, chopped
- 2 jalapeno, seeded and chopped
- 1 bell pepper, chopped
- 2 tbsp olive oil
- 3 tbsp Red Hot pepper sauce
- Spices to taste
- Spices:
- 1 tbsp Italian seasoning
- 2 tsp Cajun spice
- 2 tsp ground cayenne pepper
- 2 tbsp oregano leaves

Method
Slice potatoes as if preparing steak fries. Mix the Spices together and stir about HALF of them into the potatoes and carrots. Place in baking pan in oven at 450 degrees and bake about 30 minutes or until crisp, stirring once or twice. Cut chicken into 3/4-inch strips and mix with remaining half of the spices. Place chicken in wok with olive oil, scallion and bell pepper; stir occasionally. After about 15 minutes mix all ingredients together. Cook an additional 5-10 minutes.
