Spanish Chicken-Yellow Rice Casserole

Chicken thighs and drumsticks are baked in a casserole with rice, a little ketchup, and several Mexican seasonings.
 

Ingredients

  • 4-5 whole chicken legs (cut into thighs and drumsticks)
  • 2 cups rice
  • 1 small hot pepper, cut into pieces
  • 2 Tablespoon recaito (Goya brand)
  • 2 Tablespoon sofrito (Goya brand)
  • 1 pkg con cilantro y achioto (Goya brand)
  • 3 Tablespoon ketchup
  • 1 teaspoon garlic powder
  • 2 Tablespoon salt (or to taste)
  • 4 cups cold water
  • 1/4 teaspoon olive oil

Method

In a casserole place chicken pieces; pour rice and pepper over chicken. Add recaito, sofrito, ketchup, & garlic powder; pour water and seasoning in pan; add olive oil cover pan with foil. Bake at 300 degrees for 1 1/2 hours; remove foil; increase temperature. Bake at 350 degrees for another half hour.

 

Notes: Serve with a green salad.
