Southwestern Egg Rolls

A mix of shredded chicken, veggies, rice, black beans, pepper-jack cheese, salsa, and ranch dressing is used to fill eggroll wrappers and fried.
Ingredients
- 1/2 lb. chicken, cooked & shredded
- 1 large onion, chopped
- 1 green pepper, chopped
- 2 cups cooked white rice
- 1 can black beans, rinsed and drained
- 2, 8 oz pkgs. pepper-jack cheese, diced
- 1 small bunch flat-leaf parsley, chopped
- 1 can whole kernel corn
- about 1 cup ranch dressing
- about 1 cup salsa
- 1 dash bottled hot pepper sauce
- Salt and pepper to taste
- 1 Tbsp Southwestern seasoning
- 1 pkg eggroll wrappers
- Oil, for deep frying

In large bowl mix all ingredients (except wrappers and oil), adding a little bit of the ranch dressing and salsa at a time to get desired consistency. (Should be slightly sticky to the touch.) Place filling inside eggroll wrappers and fry till golden.
Notes: If you enjoy spicier food, add more hot sauce or cayenne pepper. When eggrolls are finished, you can dip them in ranch dressing, or salsa. Sometimes I even mix ranch and hot sauce together to get a spicier dip.
