Chicken sausage, brown rice, and fresh vegetables really make this a healthy skillet meal. Simple and flavorful for any occasion.

Ingredients:

16 oz Beer or Low Sodium Chicken Broth
1× 16 oz pkg Precooked Chicken Sausage, sliced into ½" pieces
½ cup Chopped Sweet Red Pepper
1 Tbsp Spicy Brown Mustard
2 cups Uncooked 10 Minute Instant Brown Rice
1 cup Broccoli Florets, cut in bite sized pieces
1 cup Stringless Sugar Snap Peas
1 cup Fresh Baby Spinach Leaves
2 Tbsp Fresh Chopped Basil
1 Tbsp Fresh Minced Chives

Directions:

In a 12 inch nonstick skillet, bring to a boil, over high heat, the beer, sausage, red pepper, and mustard. Boil for 2 minutes. Stir rice into boiling broth, bring back to a boil, then reduce heat to low and simmer, covered, for 7 minutes. Uncover, stir in broccoli, snap peas, and spinach, then cook for 5 minutes or until rice has absorbed broth. Cover and let rest 5 minutes. Sprinkle with basil and chives before serving.
