"Simply The Best" Chicken

This baked chicken mixture is easily put together. Pasta, basil, roasted red sweet peppers, and cheese are combined with the chicken for a complete meal.
 

Ingredients

  • 1 cup chopped onion
  • 1 cup chopped celery
  • 3 T canola oil
  • 1 4-ounce can sliced mushrooms, drained
  • 1 8-ounce can sliced black olives, drained
  • 1 can (10 3/4 ounce) cream of chicken soup
  • 1/2 cup milk
  • 1/3 cup chopped roasted red sweet pepper
  • 1 tsp. dried basil
  • 1 package (8 ounce) elbow macaroni, cooked and drained
  • 2 cups cottage cheese
  • 1-1/2 cups shredded cheddar cheese
  • 4 cups cubed, cooked chicken
  • 1 cup dried bread crumbs
  • Grated Parmesan cheese

Method

In a skillet, saute the onion and celery in the oil until tender. Meanwhile, stir together in a large mixing bowl the remaining ingredients except the Parmesan cheese and bread crumbs. Add the onions mixture. Pour mixture into a greased 13x9x2-inch (3-quart rectangular) baking dish. Sprinkle top with bread crumbs and Parmesan cheese. Cover and bake in 350 degree oven for 55 to 60 minutes or until bubbly.

 

Notes: This is a recipe that can be put together ahead of time and then baked when needed. By just adding a salad and dessert, you have a complete meal.
