Simply Chicken Pot Pie

Chunks of cooked chicken are combined with potatoes, vegetables, condensed soup and milk, and this mixture is baked between pastry crusts.
 

Ingredients

  • 1 whole chicken
  • 1 12 oz frozen vegetables
  • 4 peeled and chopped white potatoes
  • 2 10 oz cans of cream of celery soup
  • 1 cup of milk
  • 1 teaspoon each of salt & pepper (or to taste)
  • 2 refrigerated pie crusts

Method

Cook chicken: bake or boil, or for the quick method, purchase a precooked chicken from local super market. Cook frozen vegetables per directions on package or quick method use canned vegetables. Boil potatoes to desired tenderness. Pull chicken from bones; shred or cube. Combine chicken, vegetables, potatoes, soup, milk, salt and pepper in a large bowl. Lay one uncooked pie crust into baking dish, pour mixture into the pie crust, lay the 2nd pie crust on top of mixture. Close the pie crusts by folding edges and pinching them together. Cut 4 slits in the top, so pie can breathe. Bake at 350 degrees for 45-50 minutes or until crust is golden brown.
