Shredded Chicken Tostadas Compuestas

This dish is great for a hostess during a game, set out all of the ingredients and toppings, and let people create their own snacks as they go.
 

Ingredients

  • 12 corn tortillas
  • 1 15 oz can refried beans
  • 2 cups shredded rotisserie chicken, boneless and skinless
  • 2 cups shredded lettuce
  • 1 cup shredded pepper jack cheese
  • 1 cup salsa
  • 1 cup sour cream
  • 1/2 cup sliced black olives
  • 1 cup guacamole
  • 1/2 cup thinly sliced green onions
  • 1 cup chopped fresh cilantro

Method

Preheat oven to 425 degrees. Spray muffin tins with cooking spray. Heat a nonstick skillet over medium heat. Working with one tortilla at a time, place in skillet, over medium heat. Heat for 20-30 seconds per side. Flip and warm both sides. The warm tortilla will be pliable enough to form into muffin tin holes. Repeat with all 12 tortillas. Spray tops lightly with cooking spray. Bake for 5 minutes or until lightly browned. Remove from oven and fill each shell with 1 tablespoon refried beans and 2 tablespoons shredded chicken. Top with any or all of your favorite toppings.
