Sherry's Chicken and Rice Casserole

Sherry's casserole is simple to prepare and makes for a great meal. Add a salad and dinner is served.
 

Ingredients

  • 2 chicken tenderloin strips, cooked but crisp
  • 1 pouch boil in bag white or brown rice, cooked per directions
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 tbsp margarine
  • 1 can cream of chicken soup + 1/3 can milk
  • 1 cup light or fat free sour cream
  • 2 tbsp Parmesan cheese
  • 1 1/2 tsp garlic powder
  • 1/2 cup shredded cheddar cheese or to taste
  • 1/2 cup finely crushed buttery crackers

Method

Cook rice as directed and drain. Season chicken lightly with salt and pepper then cook in olive oil until done. Cut or shred into bite size pieces. Mix soup, milk, sour cream, Parmesan cheese and garlic powder.Spray a 1 1/2 quart casserole with nonstick cooking spray, add rice, and dot with margarine. Place chicken on top of rice. Add soup mixture and stir all ingredients thoroughly until blended. Cover with shredded cheddar cheese and top with cracker crumbs. Bake in a 350 degree oven for 30 minutes or until bubbly.
