Sharlene's Chicken Salad

Fried chicken strips are chopped and tossed with broccoli slaw and salad mixes, and cooked ramen noodles in an oil-vinegar-sugar dressing.
 

Ingredients

  • 2 packages ramen noodles
  • 4 cooked chicken breasts, chopped (I use KFC fried chicken strips)
  • 1 package broccoli slaw mix
  • 1 package rainbow salad mix
  • 5 green onions, chopped
  • 1 tablespoon sesame seeds
  • 1 tablespoon sliced almonds
  • Dressing:
  • 1 cup vegetable oil
  • 3 tablespoons sugar
  • 6 tablespoons (1/3 cup) vinegar
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)

Method

In a saucepan cook two packages ramen noodles in 2 cups boiling water for three minutes; drain well. Place slaw and rainbow salad in a large bowl; add noodles and chopped green onions. In a skillet toast sesame seeds and almonds until lightly browned. (Watch and stir carefully. Do not let burn.) In a blender, mix the two packages of chicken seasoning from the ramen noodles with oil, sugar, vinegar, salt, and pepper. Blend this mixture until mixed and pour over slaw mixture. Toss.
