Savory Apricot Chipotle Chicken

Broiled chicken served with a sweet and spicy fresh fruit sauce.
 

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 Tbsp olive oil
  • 1 can apricot halves in juice (not syrup), coarsely chopped
  • 2/3 cup apricot juice from can, reserved
  • 2/3 cup dried cranberries
  • 1 large yellow onion, chopped
  • 2-3 cloves garlic, chopped
  • 1 1/2 Tbsp adobo sauce
  • 1/4 cup sliced, toasted almonds (optional)
  • Salt, pepper and cayenne pepper

Method

Preheat broiler. Brush olive oil on chicken breasts and season with salt, pepper, and cayenne. Place chicken under the broiler for 5-6 minutes, then flip and broil for 4-5 minutes more, until the juices run clear. Times will vary with size of chicken breasts and strength of broiler. Remove and cover to keep warm. While the chicken is cooking, make the topping. Combine cranberries and apricot juice in a small bowl. Microwave on high for 1 minute. Set aside. On medium-high heat, saute onion and garlic until they begin to soften, (about 3-4 minutes). Add chopped apricot and cranberries, and cook for 1-2 minutes more, until most remaining liquid has evaporated. Stir in adobo sauce. Add salt, pepper, and cayenne to taste. Pile topping generously on chicken breasts and top with almonds (optional) for crunch.

 

Notes: This simple, delicious recipe combines just a few ingredients for an incredibly flavorful dish in under 15 minutes! Pork chops can be readily substituted for chicken breasts. Serve over rice with a side of green veggie for a complete, and very easy, meal!
