Saucy Chicken

Browned chicken breast halves are topped with a creamy sour cream and chicken soup sauce and baked in this easy recipe. Top with cheddar cheese for more flavor.
Ingredients
- 4 skinless boneless Chicken Breast halves
- 1 tablespoon cooking oil
- 1/4 Cup Chopped Onions
- 1/2 Cup Chopped Green Peppers
- 1 Large Can Mushrooms Slices
- 1 Can (10 3/4-oz.)Cream of Chicken Soup
- 1 Cup dairy Sour Cream
- 1/2 Cup Milk
- Shredded Cheddar Cheese

Wash chicken breasts and cook on both sides in oil until slightly brown. Drain. Place in baking dish sprayed lightly with cooking spray. Set aside. In same pan, after draining most of oil from pan, saute onions, peppers, and mushrooms. Add soup, milk, and sour cream. Blend well. Pour sauce over chicken breasts. Cover with foil and bake in 375 degree oven 30 to 40 minutes or until chicken breasts are done (170 degrees F). Remove from oven and remove foil. Top with shredded cheddar cheese and return to oven uncovered until cheese is melted.
Notes: This recipe can be made low fat friendly by using low fat sour cream, 2 percent milk and low fat cheese. The sauce is thick enough to serve as gravy for rice or mashed potatoes.
