Rustic Greek Style Chicken and Pasta

This great Greek chicken dish is great served over pasta, whole wheat couscous, or in a pita for a fresh sandwich. How versatile.
Ingredients
- 1-1 1/2 pounds boneless, skinless chicken breasts cut into 1 inch cubes
- 1 large red onion, roughly chopped
- 3 garlic cloves, chopped
- 1 10 oz bag fresh spinach leaves
- 2 tbsp extra virgin olive oil
- 1 tsp butter
- 1/2 tbsp mixed grill seasoning
- 1 tbsp oregano
- 1 tsp dried dill
- 1/2 tsp freshly grated nutmeg
- 2 tbsp fresh lemon juice
- 1/2 cup dry white wine
- 1 cup chicken broth
- 2-3 cups cooked whole wheat penne pasta
- 3-4 plum tomatoes, roughly chopped
- Crumbled feta cheese

Method
Mix all dry spices in one bowl. Heat extra virgin olive oil in a large nonstick skillet on medium high. Add chicken to skillet and cook 1-2 minutes. Add onion and cook 6-8 minutes until onion starts to caramelize. Scatter spices over chicken and onion. Add garlic and butter. Cook 2-3 minutes more. Pour in wine and lemon juice. Scrape up any bits that may be stuck to pan. Cook 2 minutes. Add spinach and chicken broth. Bring to a boil. Lower heat and simmer 8-10 minutes. Serve immediately over cooked penne pasta. Garnish liberally with chopped tomatoes and sprinkle with crumbled feta cheese.
Notes: Chicken breast and spinach combine with Mediterranean flavors in this quick and easy dish. It combines wonderfully with the dish and gives it a completely different texture. This dish is a family favorite.
