
A flavorful roasted chicken dish that has been rubbed with a savory spice mix.
In a small bowl, combine all the spices and mix well. Rub the spice into the chicken, making sure it is distributed evenly. Place in plastic bag, seal, and keep in fridge overnight.
Rotisserie chicken or, if you don't have one, place chicken in shallow roasting pan, uncovered, at 250 deg for 4 hours. After the first hour, baste chicken every so often with pan juices. Juices will start to carmelize on bottom of pan and chicken will turn golden brown.
Let it sit for 10 minutes before carving.
Notes:
We have a rotisserie, and I do not put my bird in a bag overnight. The chicken is fantastic and is done in 1 1/2 hrs when done on rotisserie.
