Red, White and Bleu Baked Chicken

Chicken breasts are placed in a baking dish and coated with "ribbons" of red barbecue sauce, white ranch dressing, and bleu cheese dressing, then baked and served with rice and peas.
 

Ingredients

  • 3 lbs. skinless, boneless chicken breast halves
  • 1/3 cup barbecue sauce
  • 1/3 cup bleu cheese dressing
  • 1/3 cup ranch dressing
  • 1 16 oz. package frozen green peas, cooked and drained
  • 2 tbsp. butter
  • 4 cups cooked white rice

Method

Heat oven to 350F. Place chicken pieces side by side in lightly oiled glass baking dish. Pour ranch dressing lengthwise so that the top third of each piece gets covered. Pour the BBQ sauce lengthwise down the middle of the chicken. End with bleu cheese dressing covering the last one-third of each piece. Cover with foil; bake until tender and 160F., about 45 to 50 minutes. Prepare frozen peas according to package directions; stir in butter. Warm the rice; combine with peas. Spoon rice and peas on a large platter; top with chicken and serve.

 

Notes: Thighs work well as option. Fat-free or low-cal dressings may be too dry for this. Substitute any sauce for the BBQ sauce; honey-mustard and Italian are great too, instead of the red-white-and-blue idea.
