Red Chili Chicken with Lemon Grass

Thai flavors are present in this recipe, which cooks the grilled chicken thighs in a mixture of chili peppers, garlic, fresh ginger, shallots, lime, and lemon grass.
 

Ingredients

  • 8 or 10 chicken thighs
  • 15 red chili peppers
  • 8 or 10 red Thai chilies
  • 5 cloves of garlic
  • 2-inches of fresh ginger
  • 1/4 cup of oil
  • 2 stalks lemon grass (6-inches long each)
  • 5 shallots, minced
  • Grated lime peel from 2 or 3 limes
  • Lime juice of 1 lime (about 2 tbsp.)
  • 1/2 cup of water
  • Salt and pepper to taste

Method

Grill chicken thighs until they're done. Meanwhile put the chili pepper, Thai chili, garlic, and ginger in a blender or food processor and blend until they're as smooth as you can. If it is not completely smooth, it doesn't matter. Heat a big saute pan on a medium high heat; add the oil and saute shallots and lemon grass until the shallots are transparent. Take the blended chili pepper mixture, the grated lime peel, salt and pepper, and add to the pan. Cook the mixture until it smells good, around 10 or 15 minutes. Add the chicken pieces and the water, mix it real well, cover and simmer on medium heat. Stir occasionally. Let it cook until the moisture is absorbed into the chicken and the chili pepper mixture is reduced. Add the lime juice, mix it real well, and it's done. Serve with hot rice (jasmine rice is the best with this dish)

 

Notes: Be careful when cooking this dish, the aroma of the red chili pepper can be strong. But when is done, it smells and taste wonderful. It's definitely worth it.
