Quick Chicken Stew with Dumplings


A fast, easy and healthy dinner solution--the dumplings are made with packaged dinner rolls!



Ingredients:

  • Boneless chicken breast (about 4)
  • 6 potatoes
  • 1/2 cup each: celery, carrots, frozen corn, and frozen peas
  • 3 cans chicken broth
  • 2 Tablespoons flour
  • 2 Tablespoons of cold water
  • Salt and pepper to taste
  • 1 can of Pillsbury dinner rolls

Method

Place chicken breast in a pot of boiling water. Cut potatoes into bite size pieces. Place the 3 cans of chicken broth in a separate pot, plus 1 can of water. Add chicken, potatoes, carrots, and celery into pot. Let boil on medium high heat for 25-30 minutes. Add frozen peas and corn; let cook for an additional 6 minutes. In a small bowl place flour and water, stir until lumps disappear. Stir in to your stew mixture, to thicken your stew. Separate the Pillsbury dinner rolls and cut each roll in fours then place on top of the stew and cook for 10 minutes uncovered. Place lid on and cook for an additional 10 minutes until the dumplings are done.

Notes: Try adding fresh or dried herbs for extra flavor--thyme, parsley and perhaps a little oregano or marjoram.
