"Quaglia con Lamponi" Quail with Raspberries

Quail is baked with sweet red wine, scallions, and orange juice, with diced apples and raspberries added during the last few minutes of baking.
 

Ingredients

  • 1 diced Quail
  • 3/4 cup sweet red wine
  • 2 diced scallions
  • 2 tbsp orange juice
  • 2 diced peeled apples
  • 2 cups fresh raspberries
  • 1/2 cup water
  • 1/4 cup olive oil

Method

Brush quail with olive oil. Put quail in baking pan. Add water, wine, orange juice; bake in oven at 375 degrees F for 20 minutes. Baste Quail. Add apples and raspberries; stir, and bake 10 more minutes.

 

Notes: This recipe can be used for chicken, goose, Rock Cornish hen, dove, and duck.
