Pumpkin-Crusted Oven Baked Chicken

Chicken breasts are coated with a ground mixture containing pumpkin seeds and almonds, seasoned with garlic powder, salt and pepper, then baked.
Ingredients
- 1/4 c pumpkin seeds (pepitas)
- 1/4 c almonds
- 1 t pepper
- 1/2 t salt
- 1 t garlic powder
- 4 T olive oil
- 1 1/2 lbs. boneless, skinless chicken breasts
- 4 T butter

Method
Grind pumpkin seeds, almonds, pepper, salt and garlic powder in food processor. Put Olive oil into one bowl and put the ground combination in another. Dip each chicken breast on both sides in the olive oil then dredge both sides in the pumpkin seed mixture. Put in 9 x 13 baking dish or pan. Bake at 350 degrees until crispy and cooked through.
Notes: I serve this with mashed potatoes (with the skin on) and roasted asparagus.
