Pomegranate Plum Grilled Chicken Thighs

Pomegranate juice makes a great marinade for these chicken thighs and grilled plums make a great addition to this delicious and healthy dinner.
 

Ingredients

  • 4 boned skinned chicken thighs
  • 3 tbsp plum preserves, divided
  • 1/3 cup pomegranate juice, divided
  • 1 tbsp plus 1 tsp olive oil
  • 2 tbsp red wine vinegar
  • 1 clove garlic, crushed
  • 1/2 tsp five spice powder
  • 2 tbsp snipped mint
  • 4 large plums, halved and pitted
  • 2 tbsp diced red onion
  • 2 tbsp sliced almonds
  • 2 tbsp diced green bell pepper
  • 1 tbsp chopped chipotle pepper in adobo sauce
  • Garnish- mint sprigs and pomegranate seeds (optional)

Method

Place the chicken in a large plastic food bag. In a blender place 2 tbsp preserves, 4 tbsp pomegranate juice, 1 tbsp oil, the vinegar, garlic, five spice and mint; blend till smooth. Add marinade to the bag; seal and turn to coat. Let marinate 1 hour in the refrigerator. Prepare charcoal or gas grill; drain chicken. Place on an oiled grill rack over medium hot heat. Grill 12-14 minutes, turning and basting to brown evenly and till thighs test done. The last 2 minutes of cooking place the plum halves cut side down on the grill rack. Cook and baste. Remove chicken and plums to a serving platter. Combine the remaining ingredients with the rest of the preserves, pomegranate juice and oil. Spoon over chicken and plums. Garnish.
