"Pollo con Pesche alla Reggio" Chicken with Peaches

Chicken thighs, brushed with olive oil, are baked in a mixture with canned peaches and their liquid, scallions, and dry white wine.
 

Ingredients

  • 1 large can peaches, do not drain off liquid
  • 8 chicken thighs
  • 1/4 cup olive oil
  • 2 diced scallions
  • 1/2 cup white wine
 
Method

Brush chicken with olive oil. Put chicken in baking pan. Garnish with scallions. Pour peaches and their liquid, and white wine over chicken. Bake in oven at 375 degrees F for 35-40 minutes until done.

 

Notes: Diabetics: use light less sugary peaches.
