Pistachio Chicken

Use this easy recipe to add flavor to traditional chicken breasts. The chicken bakes in the oven for 15 minutes, so you have time to set the table or whip up a quick side dish.Ingredients
- 4 boneless, skinless chicken breasts 1/3 c. shelled pistachio nuts, finely ground
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 Tbslp. olive oil

Preheat oven to 400. In shallow dish, combine nuts, salt and pepper. Press smooth side of chicken in nut mix. Heat oil in large skillet. Add chicken nut-side down and cook until golden. Transfer to baking dish and bake 15 minutes.
