Pickin Chicken

This chicken dish is filled with pesto, feta, and kalamata olives. They are fried until golden brown and then baked.
Ingredients
- 8 chicken filets
- 8 oz pesto sauce
- 1 container feta cheese
- 1 container kalamata olives, sliced into small pieces
- Toothpicks
- Vegetable oil for frying
- Deep pan

Method
Pound filets to flatten and spread a thin layer of pesto sauce, feta cheese and olives. Roll up the filets and seal with two toothpicks. Drop the filets into hot oil and fry them on all side to golden brown. Move the filets to a baking dish, cover it and put it in a 250 degree oven for 30 minutes. Cut the chicken after baking to obtain more servings.
