Persian Treat Grilled Chicken Breasts

Skinless, boneless chicken breasts are pounded thinly, marinated in a blended mixture of mayonnaise, lemon juice, onion, parsley, dillweed and cinnamon, and grilled.
 

Ingredients

  • 4-6 skinless, boneless Chicken Breast Halves
  • 1/2 Medium Onion
  • 1/2 Bunch Parsley
  • 1 cup Mayonnaise
  • 2 Tbsp Lemon Juice
  • 1 tsp Salt
  • 1 tsp Dried Dillweed
  • 1/4 tsp Cinnamon

Method

Poke the breasts all over with a fork and then pound them between 2 pieces of wax paper until they are about double in size. Put all the Marinade ingredients into a food processor and process until almost smooth. Put the chicken in a plastic freezer bag and pour in the marinade. Let the chicken marinate for at least 2 hours. Discard marinade. Grill chicken breasts about 3 to 4 minutes on each side, or until thoroughly cooked; the meat should be solid white throughout.

 

Notes: This recipe goes well with pilaf or tabouli. The dill-cinnamon combination is the "special something" in this recipe.
