Oven Fried Chicken Drumsticks

Chicken drumsticks are marinated in a mixture of buttermilk and Tabasco, then dipped in a combination of coating mix and parmesan, and baked.
Ingredients
- 8 chicken drumsticks (2 1/2 lbs.)
- 1 1/2 cups buttermilk
- 1 t. bottled hot pepper sauce
- Nonstick cooking spray
- 1 box (4.2 oz.) extra-crispy coating mix for chicken
- 1/4 cup parmesan cheese

Method
Combine chicken, buttermilk, and pepper sauce in a resealable bag set in a bowl. Refrigerate several hours or overnight. Preheat oven to 400F. Line baking sheet with foil and spray with cooking spray. In a bowl combine coating mix and cheese. Drain chicken; coat with mix and place on baking sheet. Bake 20 min, turn, and then bake 20 more minutes.
Notes: Can be refrigerated for up to 2 days. If packing in a lunch box, pack with an ice pack.
