Oriental Wonton Chicken Salad

Chicken breast halves are dipped in Oriental dressing and bread crumbs, baked, and cut into strips and placed on top of lettuce and veggies.
 

Ingredients

  • Prepared or purchased oriental dressing
  • Panko or soft bread crumbs
  • 2 skinless, boneless chicken breast halves
  • Olive oil
  • 8-10 spinach leaves
  • 4 leaves romaine lettuce
  • 1/2 carrot
  • 1/2 medium tomato
  • 1/2 cucumber
  • *Wonton chips (optional)

Method

Preheat oven to 350 degrees. Into shallow dish pour about 1/2 cup of the Oriental dressing. In separate dish pour the panko or bread crumbs. Dip chicken breasts in Oriental dressing, than roll in panko or bread crumbs, coating both sides evenly. (Discard any remaining dressing into which the chicken was dipped.) Brush a shallow baking pan lightly with olive oil. Place chicken breasts onto baking sheet and place in oven. Bake about 15-18 minutes on each side, or till done. Meanwhile wash, dry and tear spinach and lettuce leaves. Peel and cut up carrot, tomato, and cucumber. Combine with greens in a bowl. When chicken is done let sit for 5 minutes, then slice into strips. Plate the salad mix, followed by the chicken strips. Top with additional Oriental dressing and wonton chips, if desired.

 

Notes: *For wonton strips: In medium saucepan heat about 1/2 cup olive oil. Cut won-ton squares into 1/2-inch strips. Fry in oil until golden brown, the place on paper towel to drain off excess oil. Set aside to cool. When plating salad, top with dressing then wonton strips.

 

Number of Servings: Serves 2-3.
