Skin-on chicken breasts are seasoned with garlic, garlic powder, paprika, brown sugar and honey, and cooked in a mixture of chicken broth, ketchup and pineapple.

  • Servings: 4

4 cloves Garlic
4 Large Chicken Breasts, with skin
Garlic Powder
¼ cup Olive Oil
1 Large Onion, sliced thin
⅓ cup Brown Sugar
¼ cup Honey
½ cup Water
⅔ cup Ketchup
1 can Chicken Broth
1 can Diced Pineapple In Its Own Juice
¼ tsp Cornstarch
¼ cup Water
Hot Cooked Rice

Chop up the garlic and place under skin of chicken breasts. Sprinkle the paprika and the garlic powder on the breasts. Heat the oil in a large pan. (Oil should generously cover the bottom of the pan.) Brown the chicken in the oil. Now, remove the chicken. Put the sliced onion into the hot oil and saute until slightly browned. Return the chicken to the pan, meaty side up. Put the brown sugar on top of the chicken breasts and the honey on top of that. Mix the 1/2 cup water, the ketchup, the chicken broth and 1/2 cup of the pineapple juice together. Pour into the pan. Add the diced pineapple. Cover and simmer for approximately 1 hour. Remove the chicken. Mix the cornstarch with the 1/4 cup cold water until dissolved. Slowly add a little at a time into the pan juices, stirring all the time. (The entire amount of cornstarch-water mixture may not be needed; thicken to your own taste.) Remove from heat. Pour sauce over chicken. Serve over rice.
