Mom's Pinwheel Chicken

Coated, seasoned strips of chicken breasts are rolled with bacon slices, sprinkled with mozzarella cheese & baked. Serve them on rice or salads.
 

Ingredients

  • 3 Lbs Boneless Skinless Chicken Breast halves
  • 3 Cups Seasoned fine dry Bread Crumbs
  • 1 Cup Flour
  • 3 Cups Shredded Mozzarella Cheese
  • 1 Lb Bacon (can use turkey bacon if wanted)
  • 3 Eggs
  • 1 Finely Chopped Sweet Onion
  • 3 Cloves Finely Minced Fresh Garlic
  • 1 Teaspoon Oregano
  • 1 Cup Italian Dressing
  • 1 Lemon (juice only)
  • 1 Teaspoon Dried Parsley
  • 1 Teaspoon Crushed Peppercorns
  • Toothpicks
  • Seasoned Salt (to taste)
  • Pepper( to taste)

Method

In 1 bowl put your flour. In 2nd bowl combine bread crumbs and HALF of the cheese (Reserve other half for later), garlic and onion. Mix with hands lightly. In 3rd bowl beat eggs slightly, and then add all remaining ingredients except chicken and bacon. Set all bowls aside. Take chicken breasts and slice them into strips; pound them just to make them a little flat. Open bacon package; cut in half crosswise, and separate the slices. Preheat oven to 350 degrees. Take chicken and lightly put in flour, next in the egg mixture, and finally in bread crumbs. Take bacon slice, put on chicken; roll them together, securing with a toothpick, making them look like a pinwheel. (Bacon being mainly on the outside.) Place on cookie sheet with sides, sprayed with nonstick spray. After all are done (you should get about 20-25) sprinkle remaining mozzarella cheese over chicken. Bake for 20-25 minutes, then move your rack up and broil about 4-5 minutes under broiler to crisp your bacon, watching closely not to burn. Remove all toothpicks before serving. Excellent served with rice.

 

Notes: My family adores these and they don't take much time. They are flavorful and a huge hit at reunions. My 4 teenage daughters also love them on top of salads.
