Mock Rotisserie Chicken

Make your own rotisserie chicken in your own kitchen. Just prepare it with the correct seasonings, throw it in the oven and walk away.
 

Ingredients

  • 1 whole chicken
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon kosher salt
  • 1/2 teaspoon fresh ground pepper
  • 3 tablespoons Creole seasoning

Method

Preheat oven to 250 degrees F. Halve chicken with kitchen shears, removing the back bone. Place cut side down on aluminum foil lined 10 x 2 inch baking sheet. Rub each chicken half with the extra virgin olive oil, coating both sides. Sprinkle each chicken half with the kosher salt and fresh ground pepper. Rub the Creole seasoning on each chicken half. Make sure each chicken half is cut side down and skin side is facing up. Bake at 250 degrees Fahrenheit for 3 1/2 to 4 hours. (Skin should be browned and very crispy.)
