Mismama's Easy Enchiladas

Flour tortillas are generously filled with refried beans, Spanish rice, chicken-taco seasoning, & cheese, then rolled up and baked in sauce.
 

Ingredients

  • 1 lb shredded cooked chicken (about 2 1/2 cups)
  • 1 pkg taco seasoning mix
  • 1/4 cup water
  • 1 pkg medium-size flour tortillas (8 count)
  • 1 cup refried beans
  • 2 cups Spanish rice
  • 5 cups shredded cheddar cheese
  • 5 cups enchilada sauce

Method

In a large skillet over medium-high heat combine chicken, taco seasoning mix, and water. Mix well, stirring frequently, until chicken is warmed through, about 8 minutes. In a 9x13" baking dish put 2 cups of enchilada sauce, and spread evenly. Lay out tortillas on a clean working surface. Onto each Tortilla spread a thin layer of refried beans over tortillas. Next layer Spanish rice and spread evenly. Next layer chicken mixture. Top with some of the cheese. Roll up each tortilla and place in pan; when pan is full, top with remaining enchilada sauce and cheese. Bake in a 400 degree oven for 30-45 minutes, or until cheese is just starting to brown and bubble.

 

Notes: This is a great recipe to make with kids! They love the hands-on technique!
